Lactobacillus plantarum

It is known that some bacteria species are considered as "probiotic", in that they perform beneficial functions for the human organism when they are present in a live and viable form in the intestinal bacterial flora. For example some probiotic bacteria, such as the lactic bacteria specific to yoghurt stimulate the immune system, produce antagonist effects against pathogenic microorganisms, improve lactose digestion, perform a lipolytic activity making fats more digestible, reduce plasmatic values of cholesterol, protect the intestinal mucosa ensuring an even assimilation of the nutritive substances, produce polysaccharides that are active on some tumors and reduce viability of some enzyme-producing microorganisms catalysing conversion of procarcinogen substances into carcinogen substances. Lactic acid bacteria include those belonging to the genus Lactobacillus, Lactococcus or Streptococcus, such as Lactobacillus delbrueckii, Lactobacillus acidophilus, Lactobacillus plantarum, Lactobacillus fermentum, Lactobacillus casei, Lactobacillus rhamnosus, Lactococcus lactis and Streptococcus thermophilus. The metabolic end products of Lactobacillus metabolism include acetic acid, lactic acid and hydrogen peroxide. Certain of these bacteria are known to produce a group of low molecular weight substances, including antibodies, peptides, and peptidoglycans. Lactobacillus species are added to human and animal food stuffs to preserve them, enhance their flavors, and for probiotic purposes so that these bacteria will become available to the gastrointestinal tract. Lactobacilli plantarum is capable of fermenting all common sugars (except rhamrose) thus, having the ability to digest any industrial carbohydrate waste such as potato processing waste, agricultural waste, vegetable pickling waste, cheese manufacturing waste (whey), packing house waste, sugar refinery waste (molasses) etc. L. plantarum is homofermentative non-gas producing. The only significant metabolic product that Lactobacilli plantarum produces is lactic acid.
